Njahe/Njahi (Kikuyu black bean, with a white eye) - This bean is very nutritious and to the Kikuyu people the bean represents a symbol of new birth.
It is the first meal a Kikuyu mother eats after the birth of a child. It is also served during important Kikuyu ceremonies such as weddings, and rites of passage. For vegetarians and those concerned about BSE, Njahe/Njahi is a good source of safe protein and other nutrients.
Njahe/Njahi (black beans, potatoes and bananas)
Serves 4
Ingredients:
11b (500g) black beans
Salt to taste
5 medium potatoes, peeled and chopped
5 plantains or unripe bananas, peeled and cut into small pieces
Method:
1. Clean and wash the beans and then soak them overnight in clean water.
2. In the morning, add salt to taste and bring to the boil on the stove.
3. Cover and boil gently for 20 minutes.
4. Add bananas and potatoes and bring back to the boil for another 10 minutes.
5. Place the lidded cooking pot in the Cooking Basket for 1 ˝ to 2 hours or until tender.
6. Drain if necessary then mash all together until firm.
Adjust salt to taste.
